Whole Wheat Peanut Butter Waffles

I made a batch of these waffles this morning so I could freeze them and have some quick breakfasts for the upcoming week. I don't remember where I got the original recipe, but I've tweaked it in my own way, so that's what I'll post. These waffles have a very strong whole wheat flavor, but are surprisingly light.

Whole Wheat Peanut Butter Waffles

2-1/4 c whole wheat flour
1/2 creamy peanut butter
1-1/2 T vanilla soy protein powder (you could omit this)
1 T agave syrup (if you don't have this substitute 1-1/2 T sugar or honey)
4 t baking powder
2 eggs, beaten
2-1/4 c milk (I used skim)
1/4 c canola oil
1/4 t salt
Cooking spray for waffle iron

1.) Preheat a waffle iron.
2.) Mix the ingredients together using an electric mixer or by hand.
3.) Spray your waffle iron with a light coating of the cooking spray and make waffles according to the directions associated with your waffle iron.

Wow I would love these and so would our kiddos! Our son has a nut allergy though so I would definitely use soy butter instead of the peanut butter and also Kamut Flour for all of it's nutrition! I can't wait to give this a try with my little substitutions :)
